Percent change = (new − old) ÷ old × 100. A positive result is an increase, a negative result is a decrease. Going from 80 to 100 is (100 − 80) ÷ 80 × 100 = +25%; going from 100 to 80 is −20%.

Questions

How do I calculate percent change?
Subtract the original value from the new value, divide by the original value, then multiply by 100. From 80 to 100 is a 25% increase.
Why isn't a rise then a fall of the same percent back to start?
Because the base changes. Rising 25% from 80 gives 100, but falling 25% from 100 gives 75 — the percentages are taken from different starting numbers.
